Every morning before dawn, boats travel down the Grand Canal to the fish market near the Rialto bridge where the fish, shellfish, squid and octopus are unloaded, gutted and cleaned and arranged on beds of ice for sale to customers who begin arriving with the first light of the day.
By early afternoon, whatever remains unsold is packed up and removed and the market will be empty except for a lone figure pressure washing the entire working and display area. Amazingly, there won't be the slightest trace of the smell of fish when he is through.
