I guess that would be the Sender: field, which is present in
some e-mail. Probably better for filtering mail "in" than "out".
I see it more often in legitimate mail (mailing lists) than junk 
mail. I think it's also added if you resend ('b'ounce) a mail 
from elm on Freeport.
